Ingredients
4 red bell peppers, deseeded and cut in quarters (we also used green and orange peppers)
8 sheets of filo cut into 16 squares, 12-13 cm (4-5 in) each side
1 tablespoon olive oil
100g (4 oz) of feta or haloumi cut into cubes
4 large black olives, chopped
100g ( 4 oz) avocado, chopped
2 spring onions, cut into rings
black pepper
4 leaves of basil, chopped
Method
Grill the peppers until the skin turns black. Place them in a closed plastic bag for about 15 minutes, and then peal and chop.
Preheat the oven to 180C (350F)
Lightly oil the filo. Place 4 sheets of filo in each of 4 medium pie dishes, in the form of a star. Place in oven and bake for around 6 minutes. Remove from oven , let cool for 1 minute and remove pastry from tins.
Mix all the other ingredients except except the basil and black pepper. Place a portion of the mixture into each pastry mold. Sprinkle with balck pepper and basil. Replace filled molds in oven and bake for about 10 minutes, or until the filo becomes golden-brown.
Serve immediately
